The First Soup of Almost Autumn

We got back from the lake place and walked into the house which smelled like something had died. Following my nose I found one seriously rotten potato (from a bag I just bought on Wednesday no less) in my wire basket that holds potatoes. (Might I also mention it is in the coolest and  darkest part of the kitchen) Unfortunately every single potato that touched the olfactory offending one had to be cooked immediately.  I washed, peeled and cut out any soft spots, then chunked them in a medium dice and wondered what I was going to make with them.

Even though the day warmed considerably, this morning while we were sitting on the screened porch drinking coffee, we both had to throw a sweatshirt over our tee shirts. (But we did still wear our shorts and flip flops!) to keep from being chilly.  Because of the days beginnings I declared it soup weather. (Hey! We turned the a/c down a little lower and it was cool enough in the house to eat soup tonight!)

Slightly Different from Mom's Potato Soup

5 potatoes, peeled and diced
1 onion chopped
4 ribs of celery, chopped
2 carrots, peeled and diced
2 1/2 cups chicken broth
2 cups milk
salt and pepper to taste
1 teaspoon dill weed
2 tablespoons butter
2 tablespoons flour
1 cup cheddar cheese, grated

In a large soup pot add the potatoes, onion, celery, carrots and broth. Cook until the veggies are soft, but not mushy.  Add the milk, salt, pepper, and dill weed and stir gently until it is simmering.  In a small sauté  pan melt the butter, add the flour,  and stir until it is a nice thick paste. (You want to cook it just long enough to cook the raw flour taste, but not enough for the mixture to brown like a roux. ) Stir the flour mixture into the soup pot and cook until thickened. Stir often.  Then add the grated cheese and stir gently until it is melted.  Serve piping hot.

This is a nice thick soup that is hearty enough to serve as the meal.  Normally I would serve a salad along with this, but I was feeling particularly lazy and just didn't want to make one. TheHub  didn't care either, so all we ate was soup and more soup.

Now will someone just let me know what the proper wine pairing for potato soup is.  Pretty sure the cab was  a failure. (But it was not enough of a failure to stop at one glass)

  1. That sounds good. And oh, my gorge is rising in memory of that rotten potato smell. Eeeeuw.
    I suspect most pundits would tell you to have white wine with vegie soup. I prefer red. A merlot?

    1. We are not wine snobs at all and mostly drink reds, but the soup and cab did not work at all. Of course maybe because it was not great wine to begin with was the issue .

  2. Rotten smell? Go straight to the potatoes! Generally, I cannot stand potato soup, but this sounds really delicious. As for the wine to go with, you could just give me anything...lol. I would prefer tea with ice. Yes, my friends say I am unsophisticated, but that's okay.

    1. Yeah, those potatoes are stinky, and they are kind enough to share their stink through a couple of rooms! You can never go wrong with iced tea.

  4. Potatoes really do have the worst smell when they go bad, don't they?!

    I make potato soup when I have more potatoes than time for them to stay good. For wine, my go-to is either the open bottle or what we have in the rack. ;)

  5. That soup looks so delicious and comforting, I could almost smell it through my computer! haha.
    I had the same thing happen weeks ago with potatoes going bad. It was a new 20 lb. bag of potatoes (my son ran in the store for me and got the 20 lb. bag instead of the 5 lb. bag) and there was one right in the middle of the bag that must have been rotted. A couple of evenings later when I figured out where the smell was coming from I was up til almost midnight cooking up huge pots of mashed potatoes. I froze it all in separate containers and I must say that it has been awesome to just pull a container of already cooked homemade mashed potatoes out of the freezer to defrost and then heat up. Makes weeknight dinner prep a breeze, and I think I may buy another 20 lb. bag again and do the same thing when we are down to our last frozen container of mashed potatoes. :)

  6. Autumn turns my thoughts to soup also. And I love any soup with potatoes in it! Just finished the last of a pot of potato leek soup. There's nothing better than a crusty bun and a big bowl of steaming soup! Bring on the cold weather!!

    1. I am still in shorts and flip flops so it will be a bit longer until the weather really turns here, but I will be ready when it comes!

  11. I used to make a soup pretty much the same as this but I forgot about it because the family request pumpkin soup over and over again

    It looks delicious, whatever you have with it!

  12. It was good. I am almost ready for bean soup and sweet potato soup. Maybe the temps will drop a little in the next week.
