Bite Size Cheesecake Goodness

I know each and every family has its particular "goodie"favorites. This easy take on bite size cheesecakes is one of ours .  I make them often but not every year. I don't know why I don't make them each Christmas since they are incredibly easy and quite good. Guess I am a slow learner sometimes.

For the cheesecakes
24 ounces cream cheese
1 cup sugar
5 large eggs
Mix with a mixer until mixture is smooth. Spoon into mini muffin pans that have been lined with mini paper cupcake liners. Fill the liners completely full.  Bake at 350 for about 15 minutes. Remove from the oven and let sit for 5 minutes. The center will sink slightly.

For the filling
1/2 cup sour cream
1/4 cup sugar
Stir well to mix. Spoon into the depression in the cheesecakes. Return to the oven for another 5 or 6 minutes.  Let cool then refrigerate overnight. Remove the paper liners and return to the fridge until serving time. Put a dollop of your favorite red jelly or jam on top of the filling. I prefer raspberry probably because it looks so pretty, but will admit to using whatever I have opened in the fridge. Serve and enjoy.

And now I am off to do the last of the sweet treats. It is fudge making time and then I can do the kitchen deep clean and get the dining room table set for tomorrow.

    My favourite Christmas treat was Cheese straws (sort of like a cheesy shortbread). Sadly my mother took the recipe with her and I cannot get it right.

    3. Don't know if this is like your mom's. I did not get my recipe from southern living but this is like the one I use. I use a blend of cayenne and chipotle ground pepper https://www.southernliving.com/recipes/cheddar-cheese-straws

    4. Thank you. Cayenne peppper she (and I add). I don't think chipotle pepper was available here when she was making them, but I will continue to experiment.

    1. I have made it leaving out the sugars and substituting some blue cheese for part of the cream cheese, then topped it with minced chives and a bit of ham for a savory treat also

  4. Both the savory and sweet versions sound great. However, while they may be easy, that's a lot of steps for me. Anything beyond putting the entire cookie recipe into a pan to bake like brownies seems like a lot of work to me. But since it is a special time of the year, I've made individual cookies. :)

  6. Yum! I see those in my future for a wedding shower perhaps. I've got the last of my treats chilling-Oreo and Nutter Butter ball/truffles. Since I am making so late, I only did a 1/2 batch of each so as not to have too many left over. My sweet and sour meatballs are in the crock (helped by frozen meatballs), and my Italian puffs appetizer dough, made with crescent roll dough, are chilling before they get sliced for baking before we head to my sisters. I'm hoping in the shower at 3:15, will put makeup on and dress between batches, ad we will be out the door by 5:00. I hope you have a marvelous holiday Anne.

  8. Oh man, you've got to stop posting such fabulous recipes (oh go on then, keep on posting them). One of my resolutions is to try at least one new recipe a week and that looks a definite first on the list. My list is now getting so long I'm having to write the name of each recipe AND the blog I saw it on! Just curious though, how many does that recipe make? Have a lovely time tomorrow!

    1. This makes 48 mini muffins. I always make half of the recipe, but they do freeze well if you make the whole thing.
      I am going to try a new recipe each week for the month of January, but they are going to have to be Keto friendly cause I need to hope back on immediately. Yeah I know I should have never gotten off but that train left the station in early December.

  9. Ah, I have enough cream cheese to make half of these, just need cream. Of course, my little muffin pans are and the liners are in the dump. I do think I will save this recipe. I need to get a book to write all these down. I can save them on the internet, but looking through a paper book/journal is so satisfying on many levels.

  11. I make something similar - something I learned the other day when I couldn't find any jam in the house - I melted some salted caramel chips with a wee bit of butter and milk. I spooned this into the center and let them cool. Delish!
