1 cup frozen pineapple chunks
1/8 cup almond milk or whole milk
1 teaspoon stevia or 2 teaspoons sugar
1/8 teaspoon vanilla
Put the frozen pineapple in a blender and blend until it is somewhat like pineapple chunky snow. Add the remaining ingredients and blend until it is smooth. Put it in a bowl and enjoy. Do not put it in a bowl, hunt for camera, give up and hunt for the phone, answer the phone and talk to Mom for a few minutes before taking a picture. It is delicious but does start to melt quickly and if you wait about 3 minutes before eating it this is what you get.
In spite of the slight melt, I felt like I was eating something decadent and really felt like I was being a paleo cheat when I wasn't. Now that I have found this I might have to start making it a couple of times a week, and this is just my beginning point. Next time I might add a little raw coconut to the pineapple for a pina colada flavor. A little fresh mint maybe? And I can't imagine how delicious it will be during the summer made with a fresh frozen peach. Mango is another possibility.
Any other ideas you can think of?

Yummmm!! What a nice treat to get a taste of summer. I love the simplicity of this dessert. This sounds like a fun recipe to try with different fruits and flavors- berries, bananas.etc.

DeletePineapple is not my favorite fruit, so I imagine this would be heavenly with peaches. Sounds like it was a welcome addition to your recent eating.
ReplyDeleteI had some frozen peaches and tried it tonight. The flavor was fabulous but I over blended it and it was a little less icy than last night. When I make it this summer I will cut the peaches in a very small dice then freeze them quickly . I think then I could get it well chopped without over

You are so right about mangos. I tried frozen peaches tonight and tomorrow I am trying frozen berries. if it is as tasty as I think it will be I will definitely be going to the you pick berry farms as soon as they open
DeleteAnd YUM!!! I'm trying to eat clean again which means in Sonya speak-cutting out the dairy. This would work cuz I'm craving sweet treats.

I have had it up to my eyeballs with clean eating, but I know I have to continue it after Lent (7 more days but who's counting?) I think I will do 6 days of intense paleo and 1 day off each week for a while. Maybe then I can keep what I have lost off and continue to loose a bit more.
