I don't want to cook, much less plan
A week long trip to Palm Springs, then another week doing things that did not get done while we were gone meant I was gone from the blogging world. I could lie and say I kept up with everyone, but honestly I did not. Anyway, it's been a long time and now I'm back to normal (whatever my normal is).
I have no idea what we had for meals last week, but most of it was either sandwiches or take out. I am not terribly good at getting back in the habit of cooking when I am away from it. I am not sure I am really wanting to do much this week either.
This is my pitiful excuse for a meal plan for the week. We will be taking a short trip to Nashville this weekend to see our beautiful DIL perform at The Bluebird Cafe and we are also supposed to go out to eat Sunday night after packing bags for Rise Against Hunger. With those dates taken I will only be planning 4 meals for the week. Surely I can do that.
1. Cheeseburger casserole, tomatoes and cucumber
2. Rack of lamb (I did not cook an Easter meal. Instead we had pimento cheese sandwiches. Sue me!), potatoes or rice, asparagus
3. Chicken, roasted vegetables, salad
4. Pasta salad, grilled tuna
This may or may not happen depending on whether I go to the grocery store or not, and to be honest right now I am just not feeling it.
Have a good week staying on plan, going off plan or with no plan at all!
I made my daughter pancakes and bacon at 9:00. Ab0out 1:30, she was wondering about what we have for lunch before she got on the road back to school. I couldn't think so we picked up burritos. That's my lunch and supper. I'll probably just have picking meals this week. It's just me. There's fruit and popcorn. I'm good.
The Bluebird Cafe! That's actually someplace I've heard of, so it must be a big deal. Good for your DIL. Enjoy your trip. BTW, I love pimento cheese sandwiches, too.
Your meals sound great. I'm in such a rut that I ordered a very inexpensive meal service delivery. Well, it's actually super pricey, but my work had some sort of discount with them, which made it cheap for a few weeks. Everything comes prepped. You just heat & eat. Now, that's super lazy & meal prep avoidance, but it's what I need right now! :-)

I'm with you in that the less I cook, the less inclined I am to cook. Sunday was a baked ham with homemade mac and cheese. Last night, I cut up some of the ham, and added it with some more cheese to the mac and cheese, and reheated it in the oven. Today is a kid's birthday, and he requested, of all things, beef stroganoff, and a red velvet cake. The beef stroganoff is embarrassingly easy, as it's a Campbell's Soup recipe! The red velvet cake is a royal pain, and, of course, I realize I'm out of buttermilk, which the recipe calls for, which means a trip into town to pick some up. (I know I can make my own, but it does change the taste slightly.) I may make the roux for the frosting before I leave. While I'm in town, I'll get some butter at $2.49/lb., and maybe wander aimlessly to figure out meals for the rest of the week. I don't know what's happened, but I just don't feel like cooking lately. Have a great week!

The meals you have planned sound pretty good to me! My neighbor and another friend brought me meals for Easter so I didn't have to cook! My meal plan for this week is leftover! :D
I purchases a $53 ham from Schwans for $25. My son loves the ham I usually fix and I feared this would be a disappointment. It was not. Everyone loved it and I loved my bargain. My deviled eggs flopped miserably but my daughter made up for it by bring all the sides. She fixed a 7 layer salad, green bean casserole and mashed potatoes.
I hope you had fun in Palm Springs. I took a trip to Reno, but it was snowing! Snowing! Actually, it was much nicer here in Chicago than it was there. It was in the 80's just the other day. But now as I type this, I'm looking out my window at snow showers.
