It's Still Cold In The Freezer

Today I am back in the freezer, arranging and recording the remaining contents so I can fully plan our meals while relying on food storage as my primary grocery source right now. It has become a game of sorts and I would love to have a food budget of 100 bucks this month. Personally I could do it, but TheHub goes rogue with his Publix recreational shopping habits so it might be more like 200 bucks this month. I looked at all the food ads for this week and the only thing I could see that I might remotely like to have is a cabbage, asparagus and eggs. I have everything else I need for the week on hand already.

This is my tentative menu for the week. It feels weird to be posting this midweek, but it seems like the past couple of weeks has been filled with auxiliary Sundays. And that is the downside of holidays. As a result I am only posting the menus through Sunday and will start a regular menu plan on a real Monday instead of a fake one. Again this menu is tentative because I am always fickle and tend to resist an inflexible plan.

1. Turkey slices (gravy for hub), mashed potatoes (hub) cauliflower mash (me), green beans, coleslaw
2. Grilled steak, hasselback potato (hub) crudité and dip, keto bread (maybe)
3. Keto Philly cheese steak casserole, salad
4. Leftover ham, sweet potato casserole (hub) collards, keto bread
5. Chili, cornbread (hub) coleslaw

This menu should use the following staples, produce and dairy I have on hand.
lettuce, arugula, tomatoes, cucumbers, coleslaw mix, potatoes, onions, garlic, carrots, celery, cauliflower, bell peppers, radishes, sour cream, butter, cheese, heavy cream, coconut milk, olive oil, almond flour, coconut flour, sweetener, and spices

From the freezer:
1 pack sliced turkey
2 porterhouse steaks
2 packs pre-browned ground chuck
partial bag green beans
sweet potato puree

From the pantry:
1 jar turkey gravy
cornbread mix
brown sugar
pecans
1 large can tomatoes
1 can kidney beans

Additionally I will be making keto bread and at least one keto dessert, probably coconut "pie"
I have all the ingredients on hand so this will all be from the pantry/refrigerator.

  1. Impressive.
It is still hotter than Hades here. I am having left over fruit salad for dinner (again). Himself is having left-overs too - sausages, onions and bread rolls. Tomorrow? Who knoes.

    1. Fruit salad sounds pretty darn good for dinner. It has been insanely warm here. Not hot but it is winter and winters are not supposed to be in the 70's here.
I actually like not making a plan much better than trying to follow one, and will probably change the meals a good bit before Sunday is here and done. Such is life I guess

  2. You should consider your husband's recreational shopping in the entertainment budget because that sounds like what it really is. :)

    1. It truly is, and it get a little amusing when he calls to see if I need something when he is on his way home. When I tell him I need nothing he still finds a reason to stop, generally for grapes or bananas, even if I have them already. Of course he never comes home with just his beloved grapes and bananas.

  3. Your menu plan looks great. We're making chili in the crockpot today (to take skiing tomorrow) & my husband impulsively bought $30 worth of salmon yesterday, so that needs to be made tonight + rice. . . . it was definitely not in the menu plan or the budget!

    1. I guess they all go rogue on occasion! Taking chili on a ski trip is a great idea!

    1. It is not great, but I make it and use it as a vehicle for other foods. Keto sloppy Joe's really need more than a lettuce leaf as a delivery system to the mouth.

  5. I need to go through my freezer, too, and take an inventory of what is there. I've stuff intended for my daughter to take back with her, so, I'll take inventory after she's gone. Need to clear out the fridge, too, as I've things in there that were bought for the almsgiving that are a bit beyond their prime!

    1. I was kind of amazed at the stuff I found in the freezer, but it is all good. Now I just need to use it!

  6. My freezer is almost empty. I need to fill it up. :)

  7. I need to get mine emptied, so I can refill it and begin the emptying process all over again, and again, and again!
