Plan vs.Real Life

This past week is the closest I have come yet to sticking to our meal plan, and even when I veered off of it I mostly just changed ingredients using the protein I had planned anyway. (i.e. grilled hamburger patty became Philly cheesesteak casserole because I found 2 bell peppers that needed to be processed immediately. Chicken divan was booted for similar reasons.) 

Last week's meal plan
1. Spaghetti and meat sauce, tossed salad, garlic bread
2. Chicken korma, rice, green beans
3. Some yet undecided Fat Tuesday meal
4. Chili, spinach salad, cornbread
5. Steak, tossed salad, broccoli, baked potato
6. Grilled hamburger patty, mashed potatoes, carrots, green beans, cauliflower salad
7. Chicken divan,  tossed salad

Real life 
Monday: Chili, spinach salad
Tuesday: Jambalaya, coleslaw, pear slices, pig in a blanket rolls 
Wednesday: Chicken korma, green beans, rice
Thursday: Spaghetti or zoodles with meat sauce, salad greens, rolls
Friday: Philly Cheesesteak casserole, tossed salad
Saturday: Chicken stew over rice or cauli rice, coleslaw, tomatoes and cucumbers
Sunday: Steak, baked potato or cauli mash, tossed salad, asparagus

As usual the planned meals may or may not happen, but this entire plan consists of things I have on hand already and should require no additional purchases. This week I have a lot of lettuce and cabbage leftover. I also have plenty of asparagus, tomatoes, cucumbers, zucchini and cauliflower, along with an abundance of cheese, eggs and various frozen proteins and vegetables. (Do I think I will go to the grocery store anyway? )

This week's meal plan (in no particular order) 
1. Birthday meal for Mom (yet undecided)
2. Crustless Pizza, mixed green salad
3. Chicken crack, asparagus, coleslaw or salad
4. Ham, cheese and mushroom frittata, tossed salad
5. Pork chop/sauerkraut/potato bake, asparagus
6. Enchilada casserole, coleslaw, tortillas
7. Corned beef and cabbage, au gratin potatoes, steamed carrots, mint chocolate brownies

  1. I think I need to start brainstorming and trying to pull together a meal plan again. Thanks to the Instant Pot I seem to be able to still get a homecooked dinner on the table but I think I will feel a lot less stress/make better decisions if I at least have some sort of idea of what to make ahead of time!
    Your meals sound delicious by the way! And, I'm curious....how do you do a crustless pizza?

    1. It is riced cauliflower coated in olive oil, mixed with shredded cheese (mozzarella works best) and an egg. Press down in the bottom of a 9x13 casserole dish. Pop it in the oven until the cheese is melted and the cauliflower is "set" Top with pizza sauce and any other traditional toppings you like. I will use cheese sausage, onions and mushrooms . Bake again until everything is cooked and melty.

  2. Your menu for the week looks wonderful.....corned beef and cabbage, YUM. Happy birthday to your mom. Will you cook her a meal in HER home, or pick her up and bring her to yours? Does she have a favourite meal?

    1. We are picking up a family size ziti meal from a restaurant nearby, taking paper plates (I hate them but it will make everything easier) and cupcakes and will eat at her house. This is not an age related demand, but a forever one. If you do not celebrate at her dining room table it does not count as a celebration. Just ask me or my sister about the year I ruined Christmas__forever.

    2. For the curious__Since I do not have daily interaction with the chickens we consume I cannot vouch one way or the other about their drug habits.
      Chicken crack should be in everyone's keto 101 playbook. It hits the markers for adding fat to the meal and it basically makes itself.   6. Ohh-jambalaya! I bet yours is a treat, and considering I liked what the French students prepared for Mardi Gras, a lot better than I've had before.

    1. The jambalaya was really good. Son2 made a huge pot of it to share with the participants where he works and had a ton left over. He is a fantastic cook and I was thrilled when he offered to share the leftovers with us.

  8. What a great menu! We've got a couple birthdays coming up and Robb has been sending me videos of things he wants me to make for them. Deep fried philly cheese steak is one of them. whew! Don't know if that's going to happen...
