Leftovers Out The Ears

 Like a lot of you, I tend to overcook during the holidays. Consequently, we have a ton of leftovers that I need to make for dinners, but in different forms. Who wants to eat Christmas food for a week? Not me!
So this week will be primarily a transformation week, where things we ate will magically change forms and become something different than their first incarnations. The upside? It will be a week of minimal cooking and that does make me happy.



I know we ate this past week, but I was busy and didn't keep up with what we had, and have now forgotten it totally. We went out to eat one night and I think we did take out another night. We had sandwiches once and leftover soup just to get it out of the fridge. Who knows what else we had!

I am not planning a menu as much as I am planning food reformations
1. Scalloped ham and potatoes, asparagus (using leftover ham)
2. Meatball sliders (using leftover dinner rolls and cocktail meatballs)
3. Grilled Cheese sandwiches, coleslaw (using assorted leftover cheeses)
4. Breakfast dinner, fried apples,  possibly broccoli (leftover breakfast casserole and leftover fried apples)
5. NYE: steak, potatoes, and tossed salad (weather permitting)
6. Traditional NY Day meal: black eyed peas, collards, ham, cornbread
7. Something__Anything but leftovers!

  1. You sound so much like me. Neither my daughter or husband wanted to take one more bite of cheesey potatoes or meatballs after we had them Friday, then again Saturday, and lunch on Sunday. I'd like to think of something to do with the ham I took home form my MIL's, but will probably put in the freezer for now.

    1. Anything I can freeze has been frozen, except for things needed to reformat for meals this week. I am tired of rich foods and need something very plain! I guess that will happen next week.

  2. My family and I celebrate the New Year so, I will be cooking up a storm at my sister's on Thursday and Friday. My SIS and BIL are working all day on the 31st. Uncle will cook some of the stuff but, everybody asked me to make different sweet treats. Chocolate chip cookies for uncle, copycat cinnabon for SIS and a chocolate cake for BIL (his mother's recipe, I will make it for the first time so, we'll see). I think, I will not be wanting to cook or bake for quiet a while after this.

  3. There are some leftovers here too, that will be turned into something else through the week. We don't do anything special for New Years, so it will be a quiet day - football and hockey to watch for me, and my son will play his games on his computer downstairs.

    1. We used to go out for NYE but that was a while ago. Now we pretend we are watching the NYE television shows, but we have no clue who the performers are so in truth we read with the television going, just to see the countdown.
      We do have our traditional NYD meal, though it is not a formal or big deal meal.

  5. I have started freezing some of the leftovers today as I am getting sick of them already, lol. I need new food free of anything added. LOL

  6. I made daughter take all leftovers to her house, so now I have to cook. Oh well still have plenty here, I am thinking mushroom and asparagus soup.

  7. Sounds like some delicious meals. I love leftovers. We just had some last night from our Christmas Eve prime rib.

  8. It all sounds yummy! I'm reminded of the year my MIL took it upon herself to make us a turkey casserole -- which we promptly stuck in the freezer and forgot. The following year she was visiting, making herself at home, and discovered it untouched. Not amused!

  9. Leftovers here too. I put the ham bone in the freezer to flavor some beans at some point. Made some ham salad for lunch. Going to make a big salad for supper and if anyone wants, they can put ham on the salad, but otherwise the ham is going in the freezer. I am hammed out. ;)

    1. We still have to eat ham on NYD because of some silly superstition, but the rest needs to disappear either to the freezer or be consumed (and no one wants to eat it)

  10. Lots of left over here too. I need to freeze some of the tamales for the New Year. Today I am making burritos with the left over pot of beans. The fresh beans will get mashed and I will had some seasoning and cheese. Grands are here and they are happy with that. I might add chicken too!

  11. I brought leftovers home from my cousin's but we ate them as they were! Today, we had noodle soup for lunch and mac & cheese for dinner!

    1. It is unseasonably warm here and TheHub will only eat soup if it is cool/cold, so soup is out until the temps drop a little. I am pretty sure I could interest him in mac and cheese!

  12. I can eat Thanksgiving or Christmas food for a week! But, I have not yet cooked the turkey or trimmings for the meal. I feel poorly and the turkey finally thawed enough this afternoon. I suppose I will have to cook on Tuesday!

We used up most of our leftovers from Saturday by combining them with my sister's leftovers on Sunday when they came to our house for Christmas and brought along their leftover lasagna (a whole 13 x 9" casserole), and we had our leftover hamloaf, sliced ham, scalloped potatoes, a jello salad and a tossed salad, plus pies and cookies and junk food galore. Still trying to get rid of pies and candy, etc. But it was all good and the memories are wonderful.

    1. I am freezing all the leftover cookies today. We still have 2 pies that will either be finished or tossed. I love desserts (cookies especially) but I am tired of them.

  14. We're very happy to eat leftovers here as long as they last. I think we're just about finished with them now. My son is visiting, so the extra food is disappearing faster than it might have otherwise.

  15. No leftovers as I enjoyed holiday meals away this year. I am putting the chocolates away, though. Enough! There's a mediterranean tuna noodle casserole in the fridge that was made on the 26th awa a pan of cinnamon rolls. I need more practice with the cinnamon rolls. Happy New Year.

    1. I think eating somewhere else is the way to go in order to avoid eating all the leftovers! I am ready to eat very simple food again.
