Lamé Dinners For Two

I thought I might fancy up the word lame to make it appear a little more exciting than our meals really were. But it about like putting lipstick on a pig, and our lame meals were still lame. I made no meal plan for the week, other than to use the things that thawed when we defrosted the freezer  and of course make a seriously Amercian take on a  St. Patrick's Day meal.


With no plan in place or even any thought to what we would be eating. meals became pretty basic, which was fine with me.

What we ate
Monday: I had 4 Wahlburgers that thawed during the great defrost. Since the night was gorgeous it only seemed right to grill them.
Grilled burger patties, coleslaw, corn or keto caulimash
Tuesday: I had some leftover crack chicken and of course we had to observe pi(e) day!
Leftover crack chicken over caulirice, broccoli, keto coconut pie
Wednesday: Et tu Brute
Caeser salad
Thursday: I needed to use another thawed item. I really did not want it, but a little tweaking made it pretty tasty.
Salsbury steak (keto style) with mushrooms and onions over caulirice or smashed potatoes, Brussels sprouts
Friday:  Happy St. Patrick's not really Irish dinner .
Corned beef, cabbage, carrots, potatoes, and onions
Saturday: Happy St. Partick's Day reformed leftovers
Ruben in a bowl
Sunday: We went to an event and picked up a late lunch or early dinner oh our way home.
Purple Onion lunch/supper combo: gyro salad or chicken salad

Used from the freezer
1 pack Scarsdale Diet soup (lunch)
4 frozen Walhburgers
1 ear corn on the cob
2 slices keto coconut pie
1 pack caulimash
2 burger patties
brussels sprouts
Swiss cheese
1 pack caulirice
small pack diced cooked chicken (became chicken salad for a couple of lunches)

Added to the freezer
3 Rebel ice cream sandwiches (priorities)

Planned for this week?
I am really unsure about our meals this week. We are going to Palm Springs next Sunday, so we will eat things from the freezer and the produce I have on hand, to limit or eliminate food 
waste. It will probably lead to some unconventional meals, but so be it.

Possibilities are:
Stuffed bell peppers
grilled tuna (weather permitting)
chicken something 
Spaghetti with meat sauce
chili or soup
And all of these are subject to change based on the whims of the cook and the outside temperatures.

Have a great week staying on plan, going off plan, or with no plan at all.

  1. Sounds like a pretty good week of meals to me. I was so tired last week meal time was a bit of a chore and not exciting at all. I'm hoping with the weather warming back up this week my mojo will return.

    1. Nothing was really bad, but nothing was really good this week. I was so happy with the nice warm temps we were having and now it feels like Mother Nature decided to throw us in the freezer.

  2. Sounds good to me! You know, stuffed peppers are a favorite here, and for some reason, I always forget to put them on the menu. Every time I make them, we love them! They were the very first meal I made as a young, newly married wife. I still remember I didn't know to cover them, and they never got soft!!! Steve ate them, of course. And it has been bliss ever since! LOL

    1. We also love stuffed peppers, but I only make them during the cooler weather because the oven heats the kitchen up so much.
      It is so nice that new husbands will eat whatever is put in front of them.

  3. I somehow burned by curry dish (and, I've been making it for years), so one of our leftovers for the week is no longer. I barely salvaged it on Saturday. Which means, the week ahead is going to get interesting, since I have to be in the city for two days for meetings. Oh well!

  4. I am always impressed at the variety of your meals. I often make a big dish of something and eat left overs (varied a little) throughout the week.

    1. We both needed serious updates to our clothes. We both see and wear them literally for years. As an example I have a sweater I wore (still wear) to the hospital when Son3 got his first set of tubes in his ears at 4 months old. Said son graduated from college in 2017 and has been married 3 years.
      I put that sweater up (again) when I changed over my winter to summer clothes (Boy that was premature wasn't it/)

    2. I love that you're wearing things from 20+ years ago. It's so anti-waste. It also means you have remained the same or similar size which is an achievement

    3. What that really means is I was still had a little post pregnancy weight and it was back when people wore oversized clothes!

  7. I baked a Turkey breast. It shall be my meal for the week, along with either salad or green beans with lemon. Cindy in the South

  9. It all sounds good to me! I generally make one or two things and have leftovers the rest of the week; occasionally, they are turned into madeovers! :D

    1. I guess it was just not what I wanted. I had rather choose what we are going to eat rather than have it dictated by an unexpected thawing.

  13. Your week was not too bad. I wouldn't say your menu was lame at all. Sounds pretty good. There are weeks here we can't pull it together and it's just a sloppy week of eating (laugh).
