Back to meal planning

Since I had no meals planned for this week, there was nothing I was aiming for. This is what we wound up eating for the week.

Monday: I found a frozen package of spaghetti sauce, cooked  some  spaghetti noodles while it defrosted in the microwave, made a quick tossed salad and called the meal done.

Tuesday: During the morning I was on the computer looking at the restaurant re-openings, and hoping we are not rushing into this too soon. As I was looking at a partial list I decided to see if two of my favorite places were going to seat limited seatings or remain closed. Highland's Bar and Grill (my absolute favorite) is not reopening yet, but when I checked out Hot and Hot Fish Club I noticed they are not having seating, but they are offering very limited options for take out,  I only had to mention it to TheHub called it in while I finished working at Mom's, then we were on our way to get it.  If they are still offering takeout next week we will do it again. Yes, it is that good! (Link to my homemade version of the salad. It is really good but not nearly  as good as theirs.)
I probably should add we also stopped by Bruster's and grabbed a quart of Graham Central Station ice cream too.

Wednesday; We had to run to Home Depot to pick up some salt for the pool. I love that they are still doing curbside pickup for those of us who are continuing social distancing even though our governor has declared things are just fine. So open up and go get your nails done and a couple of new tattoos. Just put your money back into the economy so if the infection rates skyrocket, everyone will have sassy hair and new ink.
After we sat for about 45 minutes waiting for an order I placed at 10 a.m. we decided to run grab some take out from a nearby restaurant. (Yeah, I am not going inside one of those either)

Thursday: After the services for Mom I stopped at Taziki's and bought 2 family meals to bring back to her house so we could all gather and eat. I  counted it as our meal since we wound up having a virtually nothing for dinner

Friday: We had a little remembrance luncheon for Mom's caregivers and had enough leftover for my sister's and my dinners.
Fried chicken, mashed potatoes, green beans,.biscuits

Saturday: TheHub and I went to the lake to do a few chores, which we did not get done because everything we touched screwed up. Oh well! On the way home we both were taking about dinner and agreed steak sounded good. I had 2 T-bones in the fridge so we cooked one to split and froze the other for another day.

Sunday: I worked in the backyard, then had a socially distanced yard party with a few neighbors. TheHub was feeling bad and did not join us so when I came back in I warmed him a can of soup and I scrounged the fridge for leftovers.

I guess  will plan a menu for this week, or at least pretend to (in no particular order except for meal #1):
1. Take out (spending the night at the lake to meet a repair man in the morning)
2. Stuffed bell peppers, coleslaw, squash
3. Frittata, tossed salad
4. Baked chicken, mushrooms, green beans, rice
5. Pasta with pesto sauce, tossed salad with artichoke hearts
6. Grilled scallops, asparagus, tomato slices, rolls
7. Chef's salad, French bread

  1. I think it was a great idea to get as much take-out as you wanted. You've had a lot of stress lately and making your life easier has got to help. But I do think it was lovely that you showed your appreciation to your mom's caregivers. I'm sure they really appreciated it.

    1. They were not allowed to go to the funeral and they wanted to. Our church is still using the 10 or less per event. There were seven in our family and the minister made 8, so we could not ask 2 and leave the other three out. It was a time for them to laugh and share memories of Mom over the past year.

    Take out meals sound good to me! I am being super cautious, right now, and not doing even take out meals! Just what friends and neighbors decide to bless me with! I think we are opening up too soon, myself, and I expect there will be another spike in the numbers in another couple of weeks!

    1. I agree. I'm really worried about a second wave. I'm staying home and only going out for groceries once a week. We've done takeout a few times though because all this cooking at home is a getting to be a huge bummer.

    2. Bless, thank you. A round of antibiotics and he feels much better. With Covid I think people are not paying much attention to allergies until their sinuses are infected. hope and pray there is not a spike, but when I am in the car I see a lot of people out shopping.

  3. I hope your husband is already better and that you don't come down with whatever it is.
    Hooray for take out. And social distancing.
    We are opening up here too - but very very slowly. Which suits me just fine. A 'healthy' economy will not survive if the consumers die.

    1. He just had a routine sinus infection, but no one is ever sicker with one than he is. If you don't believe me just ask him.

  4. I think holding the lunch for the carers was super sweet. I am sure they appreciated it, and were happy to be a part of your mom's life. I'm just not sure about how fast things are opening and pushpin the social distance. I hope we don't blow what was attempted t achieve the last few months.

  5. We can only hope for the best and do what each of us is comfortable with but like you we are not eating in restaurants even though they are opening at 50 percent capacity this week. Take out though supports these same restaurants and I am sure they are happy for your business. I hope your hubby is feeling better.

    1. I am trying to keep our local economy going by doing take out and curbside delivery with other purchases, but I am not ready to join the masses yet.

  8. I wish I could convince my son to eat more salads. I happen to love them, he's a meat and potato kind of guy. Maybe if I just make them and he has no choice.

    1. I am doing better now, but still go by Mom's house nearly every day. My sister and I are taking it one closet or one drawer at a time. Fortunately we are in no hurry to sell the house and Dad had made sure everything financial was in our names also, so we don't have to worry about that.

  11. Things are starting to open up here, but I'm not going. Miss restaurants, but can't imagine when we'll go to one again. Although we're doing plenty of takeout and pickup. Hope you're doing OK.

    1. I do miss restaurants and live music, but such is life. Having the option to take out from restaurants that never offer it is really nice though!
