Plans, Hopes, Life

As usual I make a plan and have every intention of following it. This week was no exception


This is what I thought I might do. Obviously I suffer from some delusion that if I write it down it will happen. 
 1. Veggie meal: Leftover zippier peas, corn on the cob, coleslaw, air fryer "fried" green tomatoes, sliced tomatoes, cucumber slices
2. Chicken salad with lettuce, tomatoes and banana peppers
3. White bbq chicken, caulitato salad, sliced tomatoes, green beans
4. Veggie meal: Squash casserole, green beans, tomato cuke and onion salad
5. Italian sausage, tomato, onion,  bell pepper, banana pepper, zucchini one dish meal
6. Take out
7. Grilled cheese sandwiches (Because I have a loaf of keto bread and have been sandwich hungry) coleslaw, chips or my keto version of cheese puffs**

This is what I really did:
Monday: I began the week feeling like Snow White with birds singing and critters doing my housework eating my tomatoes. Yes this was the week I was going to stay true to the plan and keto.
Veggie dinner, either zipper peas or green beans with mushrooms, sautéed squash. corn on the cob (or none), coleslaw, cucumber peach salad, toast or keto toast 

Tuesday: TheHub had to work late so I deviated slightly from the plan and cooked the chicken indoors rather than outside, but it was a very minor deviation.

Wednesday: Our pepper plants have been producing abundantly and I had a few bell peppers that needed to be used, though I had planned the menu knowing I would cook them this week.

Thursday: I had such high hopes. By Thursday the plan was clicking like clockwork. I had planned to use some chicken from a weekend Aldi purchase. (Chicken legs and thighs in a 10 pound bag for 4.90. It had all been cooked and frozen except for enough to top a dinner salad.)

Friday: Throughout our marriage, Friday nights have always been date nights, even if it meant just taking the kids to McDonalds. Once the kids were grown it was the two of us going out to eat, and now with Covid we are back to doing take out 
Takeout and I don't even remember where we went or what we got, but I do remember Keto and I parted ways for the weekend.
 
Saturday: TheHub worked in the yard and I worked around the house. After a hot blistering day neither of us were particularly hungry and neither had any clue what we wanted. You know how I said the meal plan was clicking like clockwork. It still was but now the clock was a cuckoo clock__with busted springs

Sunday: My Beloved Sister and I had an open house at Mom's and TheHub had to do some work from home. I got home just as he was finishing. Instead of just having a salad or something similar here TheHub declared he was in the mood for a fish sandwich. I will never argue about not cooking.

And now what may or may not happen this week. Son3 and DIL3 will be here Wednesday so this entire meal plan is subject to change (like every week I plan):

1. Veggie dinner: corn on the cob, butter peas, okra, sliced tomatoes
2. Spaghetti with meat sauce, tossed salad, garlic bread
3. Grilled lamb chops, (grilled chicken for DIL who does not eat lamb) rice pilaf, Brussels sprouts, sliced tomatoes, sliced cucumbers
4. Grilled pimento cheese sandwiches, coleslaw, pickles
5. Veggie dinner: depends on what is at the produce stand
6. Hamburgers with all the fixings
7. White bbq chicken, baked beans, coleslaw, sliced tomatoes

Have a great week staying on plan, going off plan, or with no plan at all!

  1. Ive been wanting Captain Ds, but we eat out so rarely that there are other things I want to eat fist. So many choices, so little time. LOL

    1. It is not my favorite place to eat but TheHub loves it. He is not food demanding so I will accommodate his whims.

  2. We actually did takeout this weekend as well - I picked up slushies/ice cream cones at McDonalds for the kids on Saturday, and we went out to eat at a fish & chips place on Sunday. Sam had a tournament, Nick had soccer, and we celebrated the last day of "summer", as school started today.

    Last night was absolutely comical, as my husband burned the rice. Persian rice is his specialty, and I've never known him to burn it. I kept telling him I smelled it, and he kept assuring me I was nuts, while he was outside barbecuing. Unfortunately, I was correct, and the entire batch needed to be dumped. Ah, so it goes. ;)

    1. I am sorry about the rice and feel worse for whoever had to clean the pan. Burned rice is a pain to clean.

  3. I love that Frank Sinatra song. I have it on my Amazon playlist and if I need to "bop" while I'm in the kitchen I blast that song! I think that's probably why my son moved out - couldn't listen to that song one more time!

  4. It would be foolish to make a plan around here. But, the diversions would be entertaining reading. We had Captain Ds and it will be another decade before that sounds like a good idea to me.

  5. Funny girl! I, too, love making lists ... but I'm not terribly crestfallen by all the 'carryforwards' at week's end. That's a terrific song I never get tired of hearing AND singing!

  7. It was a good plan and you did well to keep to it for as long as you did! :) That's a great price for chicken! I remember back when we used to buy chicken at that price! Hope this week's meal plan works out well, too. Even if it doesn't, I know you will be having some good meals with Son3 and DIL3 visiting. :)

  9. All your meals sound fine to me, and basically how my week went in the kitchen. Except for Chick Fil A. Not that you ask, but I would rather go to bed hungry than spend a single cent on those anti-Equality-Act supporting homophobes.

  10. wow how very organised of you! to have a weekly plan for food even if you don't always stick to it. my menus are fairly ad hoc:) Is a fish sandwich actually a sandwich or some kind of burger?

  11. With covid in full swing here, my daughters have decided they don't want to be in the shops every day as they were in the past so we make a meal plan for the week and we actually make all the meals on the list.

    Is a fish sandwich just fish between slices of bread or are there nuances I need to know ?

    1. Fish on a bun with lettuce and tomato slices, mayo or tarter sauce (the hub is mayo I am tarter) and when we get it home I add paper thin slices of red onion to mine.

  12. We're just sort of eating in the moment. When the kid goes back to school, I'll be more planful and use up stuff.
