When A Plan Is Not A Plan

Last week I decided I was not going to plan meals, but would just shop from the freezer instead.

This was the result of trying to grab something from the freezer in the morning to cook later in the day:
Monday: I had thought I would just lie and tell TheHub I had nothing thawed so he would stop and pick up some take out food on his way home from work. I had taken out a pack of chicken and it had defrosted but it did not sound good at all. Then, I remembered the packs of cooked ground chuck. Voila!  Comfort food!

Tuesday: I found instructions for a new way of cooking bone in, skin on chicken using the air fryer. The results were so tasty the chicken reluctant Hub even asked to have it more often. Winner!

Wednesday: I forgot TheHub had a dinner meeting. There was no way I was going to cook anything just for me. Scavenger meal!
Leftover meatloaf, less than stellar romaine lettuce, blue cheese dressing

Thursday: I had defrosted a couple of things that had thawed and needed to be used.
London broil, broccoli, sliced tomatoes, toast

Friday: The new order date night meal
Chicken dinner, coleslaw, biscuit, and mashed potatoes and gravy (or not) AKA Take Out KFC

Saturday: It was a super football game day here with good games starting at 11 and continuing through the night. We planned on doing the normally unthinkable dinner in the den, so I wanted something simple, that would virtually cook on its own.

Sunday: We spent the day out and about exploring and had a large late afternoon lunch. We were not hungry but had some food TheHub bought for watching the games Saturday that was not eaten. 
It became dinner.
Steamed shrimp with homemade cocktail sauce. (yes, I know it is lame)


Used from the freezer:
pack cooked ground chuck
pack chicken thighs
London broil
1/2 bag broccoli 
2 more packs cooked ground chuck

Updated freezer inventory
6  5 packs of chicken
5 packs of ground chuck
3 packs browned ground chuck
2 duck breasts
2 racks of lamb'
2 salmon filets
6 tuna steaks
1 steak
1 pack cooked beef for Korean beef bowl
3 packs Conecuh sausage
2 packs smoked pulled pork
1 London broil
12 frozen hamburger patties
1/2 bag frozen broccoli
Newly added frozen food
7 packs ground chuck (big sale)
2 packs chicken breasts (sale)
sliced cooked leftover London broil that will become a French dip in the future
2 swordfish steaks (another sale)

Menu plans? Not making any. I do have the duck breasts thawed, leftover cheeseburger casserole, and some veggies for a veggie meal. TheHub's birthday is Thursday, so I think I will grab the rack of lamb from the freezer since it is one of his favorites.  Other than that, it is just a thaw, and decided in the moment what to make type of week. But looking at what I just typed, I guess I do have a loose plan!

  3. I will need to learn the air fryer chicken method. Cucumber, tomato and onion salad is my favorite.

I seasoned bone in skin on chicken thighs (just used a seasoned salt blend), sprayed some avocado oil on the rack of the air fryer, then spritzed the chicken well with the avocado oil and stuck it in a preheated air fryer at 400 degrees for about 7 minutes. Next I flipped it over and cooked it for another 7 minutes. So simple yet so delicious!

  4. Other than homemade pizza, our air fryer gets little use -- but I'm definitely going to try your method (above)! The thighs are Tom's favorite. How do you do your Conecuh sausage? Last week we went through 2# in the Instant Pot and just dipped them in mayo/mustard.

    1. It just depends. Often I grill them whole then slice into bite size "coins". I melt equal parts of raspberry jam and hot pepper jelly to dip them in.
      Other times we have sausage and cabbage, or sausage with oinins and peppers.
      They are also wonderful cut up into bits and mixed in with a cheesy biscuit dough before baking\

  6. Sounds like the air fryer was a good investment! I took out a packet of bone in, skin on chicken thighs to thaw for dinner. I was going to make a chicken curry, but, now, I am thinking I might just bake them, instead - any excuse to turn on the oven these evenings! :D

  8. If we every get our new range, the oven has an air fryer setting. I'm looking forward to experimenting with it.
