Plans or Exceptions to Plans?

(Oops, I forgot to post this yesterday)

Plans come and plans go, and some days I even pay attention to them. But most days I tend to go rogue and ignore them. This week proved to be no exception




Planned:
1.Sloppy Joe's, coleslaw
2. Veggie dinner TBD
3. Crustless tomato pie, tossed salad
4. Out to eat (Meeting cousin, who is in town, for dinner)
5. White bbq chicken, corn on the cob, (or none), coleslaw
6. Salad meal TBD
7. Out to eat (Probably meeting BIL and SIL in Tuscaloosa)

Eaten:
Monday: I have ground beef and leftover tossed salad in the fridge. This meal was a no brainer.
Sloppy Joe's, tossed salad

Tuesday: It was raining too hard to fire up the grill. Instead I cooked the chicken I had thawed in an iron skillet and tossed it in sauce.
Buffalo chicken, corn on the cob (or none) coleslaw, buttered buns (keto or brioche)

Wednesday: TheHub worked late and needed to go somewhere different just to shake the work willys out of his system.
The Electric, either flatbread or the insides only of the Tchoupitoulas sandwich

Thursday: I had a ton of tomatoes for my last visit to the produce stand.
Crustless tomato pie, salad

Friday: We met my cousin and her husband along with Son2, DIL2 and TGS at The Halfshell Oyster House for dinner.
Various fish dishes, salads, oysters on the halfshell, and grilled veggies

Saturday: We were at a family event pretty much all day Saturday and were not inclined to cook anything.

Sunday: Summer returned and we decided it was the perfect night for grilling
Hamburgers and all the fixings.


This week I have got to use some of the sweet peppers. I am drowning in them and they keep producing like crazy. Any given day we are harvesting 4 to 5 peppers, and I can only eat so many each day for lunch. All  coleslaws and tossed salads are made  pepper dense, but please___share  your favorite dishes using sweet peppers . I am desperate!

1. Squash casserole, pink eyed peas, okra, tomato slices
2. Grilled tuna steaks,  mashed potatoes or caulimash, tossed salad, green beans
3. White bbq chicken, caulitato salad , baked beans (or none) coleslaw, keto cornbread
4. Stuffed peppers, rice, coleslaw, rolls or keto rolls
5, Keto sweet and sour chicken (have to use some of these peppers) rice or caulirice
6. Philly cheesesteak casserole, tossed salad
7. Out to eat/ takeout or Alabama football starts this week so there is the possibility of a ball game  snack type meal. Depends on whether TheHub goes to the game or not.

Have a great week staying on plan, going off plan, or with no plan at all.

  1. I only like sweet pepper (which we call capsicum) raw so I will be no help to you.
    Plans? Something which rarely come together here.

    1. I am eating them raw every day, but my stomach can not handle the yield!

  2. Do you mean bell peppers and the colorful--red, yellow, orange peppers, not hot? I only use those for flavor, but Tommy eats them in his salads. I have made meatloaf-stuffed peppers, so I am not much help. I am surprised you don't have critters to help you eat them.

    1. We have several varieties of peppers (bell banana, etc) that are sweet but only the jalapeño plants are hot. The chipmunks can't reach the peppers and the groundhog does not like them.

  3. I love stuffed peppers so if they are big enough to stuff with the fillings of your choice, that's my recommendation. They might freeze for future easy meals. What about just roasting with others veg and putting in keto friendly wraps like fajitas? I love peppers but yes, there comes a point when there might be more than enough.

    1. I am just facing overkill with peppers and pepper flavors. I have frozen a lot, but they are going hog wild in the yard.

  4. I like your meal plans whether you keep to them or not! I am not much of a fan of peppers other than chilies (serrano, etc.). I cut any bell peppers in strips and freeze them to add just a few strips at a time to stir fries, etc., just for flavor.

    1. My biggest issue with the plan is what sounded good Sunday night may or may not sound good any other day.
      I am freezing strips of peppers, and eating them raw every day for lunch. The only peppers with heat we are growing this year are jalapeños. Last year we had Serranos and cayennes. I am not sure why I didn't plant them this year.

I don't plan my meals as I eat the same thing almost everyday...(foods on my blog are usually for my family) and even I did sometimes, I hardly followed it through.Your crustless tomato pie sounds fabulous, Anne. I like peppers, but those bell peppers are too sweet for me, my husband loves them though.
