I Just Can't Explain

Each week I plan meals for that week and each week I change my mind, usually by Monday evening, which is kind of amazing since I don't post this plan until Monday morning. One would think because I plan it the day I put it on this blog that I would at least start the week with dinner made according to the plan. Obviously one would be highly mistaken. I would like to think there is some reasoning behind it, but . . . .

This is what my pea brain thought we would eat for the week:
White bbq chicken caulitato salad, green beans
2.Vegetable beef soup, cornbread
3. Philly cheesesteak casserole, tossed salad
4. Take out
5. Chicken scampi, pasta or zoodles, broccoli, sliced tomatoes, cucumbers
6. spaghetti over noodles or zoodles tossed salad
7. Veggie meal (depends on the produce stand availability)

And this is what really happened:
Monday:  I spent the day doing random house chores and did not think of dinner until TheHub called to say he was on his way home. By that time I did not have time to cook the cauliflower and cool it to make caulitato salad, but I knew I had to use the chicken in the fridge. Punt time!
Chicken with artichoke hearts and spinach in cream sauce, sliced tomatoes

Tuesday: We thought we would be watching the election results all night so I had cooked quite early during the day.
Vegetable soup, crackers

Wednesday: I had spent the day out of the house all day doing some shopping looking for upholstery fabric, because now with the new facelift in the rooms some of the chairs are going to need to be recovered.  (Yeah, this is just what I want to be doing right before the holidays)
Take out Basil chicken, sautéed spinach from The Red Pearl

Thursday: Mom and Dad bought local art (generally water colors) from every place they traveled. Each piece was beautifully and thoughtfully framed and when we started emptying the house we thought about selling them, but art was very personal to Mom. My Beloved Sister's husband is an artist by profession and her house is already covered with painting, drawings and sculptures so I inherited most of it. I found by changing some of the mats and frames I was able to incorporate a lot of it into my home even though Mom and I had a very different aesthetic. (My powder room is almost a gallery now) Since I was home all day messing with art, making dinner was a piece of cake
Spaghetti with meat sauce, rolls

Friday:  TheHub called sometime during the day and told me he was craving a particular meal. It was not a problem for me, since he would pick it up on the way home from work.
Hot and sour soup, egg roll

Saturday: We had to run to the lake place to check everything after the power was restored. Then we HAD to get home to watch Georgia/Florida  and Clemson/Notre Dame. I would blame this on TheHub but I like to watch college football as much as he does. Intense ball game watching requires an easy meal.
Leftover vegetable soup

Sunday:  Saturday on the way back from the lake we were going to run into Aldi to pick up a couple of items. We stopped at the one closest to the lake but it did not have what we were looking for. No problem, there was one more on the way home. As we neared the second store my favorite girl called to FaceTime. I never turn that down, so TheHub ran in the store by himself while I talked about dragons and school things . He did pick up what we could not find at the other store and also found something else he wanted to try. I guess he forgot what we had for dinner on Monday.
Artichoke stuffed chicken, sliced tomatoes

And now on to this weeks list of potential meals
1.Chili relleno souffle, salad
2.Pot roast with veggies, coleslaw
3.Italian wedding soup, cornbread
4.Some kind of dinner salad (Taco salad possibly)
5.Grilled steak, tossed salad, mashed potatoes
6. Take out
7.White bbq chicken, coleslaw, green beans

Hope you have a great week staying on plan, going off plan, or with no plan at all!

  1. You still ate so who cares if it works out exactly as planned or not. I think I'm going to have to look up a recipe for the Chili relleno soufflé - yum!

  2. It's because you are a rebel and meal planning doesn't go well with that :)

    1. I think you're right- I am so not a rebel and like to have my weekly meals planned. Hhen Hubby and I first married and only had one car he drove to school/work, I planned monthly menus and pretty much always followed them. I've always incorporated leftovers into my menus though. I was lucky- hubby and the3 kids pretty much ate everything. My youngest daughter is more particular but she would always make a bologna sandwich if necessary.

    2. Fortunately my crew was always fine with whatever I served, and I do make sure to use what I have, just rarely in the way I originally intended.

  3. I feel differently about the day between 6:00 a.m.and 4:00. I asked hubs what he thought for supper. a tthe time, I was thinking a pork roast, but now I think crock pot psta-he didn't care, s I'll need to decide by noon on the roast, but might change my mind yet again.

    1. I do understand changing the mind. Sometimes something that sounded really good in the morning sounds horrid in the evening.

  4. I did the same thing last week, Anne. I just felt like having something different. Hot and Sour soups sounds delicious. It's my go to Chinese soup too.

    1. Hot and Sour soup is my feel better soup. Things are blooming right now that I am allergic to and I am sneezing my head off.

  5. I rarely make a plan, though I have to use up perishable items before they perish. Last week there were two or three days when I thought I would cook a chicken that I had bought, but fortunately it was sealed with a long shelf life, so I finally roasted it last night. I can see what happens to you!

    1. I really do like to cook, so preparing the meal is not a big deal, but I am fickle and resist restraints, which a plan feels like sometime.

  6. Not much of a plan here, though with C having a jaw infection I did have to think more about what was on the plate. Thankfully that's cleared up. Most days I just reach into the freezer and whatever comes out is the base and I go from there.

You eat very well for someone who goes off script! I had to look up chili relleno souffle.

  7. I rely on left overs and punting. I have a very busy evening ahead and am grateful that there ARE not only left overs but tasty ones in the fridge.
And envy you your time chatting about dragons and school things.

    1. Dragons and school things are all we talk about right now, but I am sure it will change soon.

  8. I suck at meal planning so, my main goal is not to waste anything. I started using these reusable fancy plastic bags for vegetables.

    1. I try to get the veggies ready to cook and bagged so all I have to do is throw them in whatever. I still am a threat to scoot something to the back of the crisper and have to do emergency cooking to keep it from ruining.

  9. I'm glad you were able to incorporate much of your mom's artwork into your home. That would be very sentimental to me!

    1. Today my sister came over and had to use the powder room. When she came out all she could talk about was how different it looks with all the artwork

  11. I manage to change my plan within the hour. It all has to do with how I feel, if I have what I thought I did in the refrigerator, and if I start too late.

I, too, am in the market for upholstery fabric. Is M's still open. I went by there when we were downtown and either it moved or I missed it. What is a good place to buy upholstery? A friend said she was going to upholster my old sofa for me. How nice is that? Anyway, I don't know where good places are anymore. The last I bought was a tapestry at M's. It was way too expensive, but the chair was $0 and I only needed 1.5 yards and upholstered it myself.

  12. M's went out of business about 5 years ago. Before they did they had every single piece of fabric on sale for 3 bucks a yard. I walked out of there after spending over 500 dollars and had a car full. King Cotten has some beautiful fabrics. I went to United Textiles today and found a fabric for a Morris chair that I am going to recover. I did not buy it because I wanted to see it in natural light and how it worked with the room so I only brought a sample home.
JoAnnes has upholstery fabric as does Hobby Lobby and Calico in Hoover has some.

    1. Anne,
Thanks for the info. My friends in Cullman who know about all the upholstery places have moved, died, or just no longer are in the know. I like King Cotton, bought one thing there. I know I have been to United Textiles, but remember nothing about it...lol. I have not heard of Calico. Thanks a lot. I wish I had known about the sale at M's. Is there any place that adheres fabric to a plastic...forgot what it is called. A friend had some for her kitchen chairs. Her two preschool boys could not destroy it with spilled milk or spaghetti. I have no idea what her budget is for the fabric for my Mediterranean-style sofa. I know, but it is a seven-foot sofa and I love it.

  13. I like the tradition of buying local art when your parents travelled. We buy a magnet.
