Meat My New Obsession (Vegans Beware)
I have a Costco card, good knives, freezer space, and enough time on my hands to try some of the tips these guys offer
I gave up my Costco card several years ago. But, I've cut up whole chickens and ground my own meat (in a hand cranked grinder my mother had). I've never tried cutting brisket like that, though.
I have a cast iron grinder that was my grandmothers. I have used it often but it is insanely hard to clean (It is hand cranked also) so I tend to forget about using it and just grind in my food processor. When I was a teen it was always my job to break down the chickens. I only put that video up because most of the Bearded Butchers videos are breaking down whole hogs or sides of beef. I do find that interesting but the chances of me butchering a whole side of anything other than fish or fowl are slim to none.
The salmon is very impressive (although I don't think I'll be having a go). That being said, I think I could fairly easily become vegetarian so I doubt I'm their target audience! Do post a few pictures if you have a try!
To be honest though we do eat meats, our portions are very small. My main interest is to have thing portioned to our liking and to save a few coins at the same time.
