Plan or Non-Plan?

A plan is only as good as the follower of the plan. I knew this would be an unusual week for meals, but had no idea how far off it would go. Yep just count this as a big fat fail. And yet, life goes on and I will make a plan just like I always do.

What I thought might happen:
1. Pesto chicken, over pasta or zoodles,  sliced tomatoes, green. beans
2. Cereal or something equally easy (Hub has a dinner meeting)
3. Chopped salad, rolls or keto rolls
4. Veggie dinner (depends on garden output)
5. Grilled something (steak or burgers) tossed salad, green beans
6. Take out
7. Veggie dinner (tbd based on what we have in the garden)

What really happened:
Monday: TheHub had a dinner meeting so I scrambled around the fridge to see what I had that required nothing more than putting it on a plate
2 slices Lebanon bologna*, watermelon, avocado

Tuesday: TheHub had another dinner meeting and I was free to do the snatch and grab refrigerator thing again.
Chicken, coleslaw

Wednesday: I thought I was going to get to continue my no cook streak, but TheHub had no meeting so he came home. Glad to have him home, but I was neutral about cooking.
Squash casserole, veggie medley, zucchini waffle

Thursday: I got stuck at Mom's with the electrician. He did not finish until well after 7, and by the time I got things swept up and in show shape it was after 7:30 when I finally returned to the house. Because someone is very wise he suggested we just pick something up.
TheHub got macaroni and cheese and I got a container of coleslaw. I guess neither of us was really hungry

Friday: We had decided we would watch the Olympic opening ceremonies. I love watching all the countries carrying their flags and all the excitement they have, but I am always thrilled with the countries who have very small delegations, particularly the one with 5 or fewer. I find myself sitting in the den applauding for them.
Leftover veggies. We each had different bits and bobs on our respective plates, but we did manage to clean out 7 small containers that were in the crisper drawer.

Saturday: Our plan was to go out to eat, but we had both been hot and moist from running around and then doing things outside. We decided rather than stop and get cleaned up we would just call our favorite Mexican joint and go looking like a couple of haints** for a quick curbside take out meal.
Chili poblano meals

Sunday: We ate a late lunch and neither one of us was hungry
Watermelon

What the optimist in me thinks might happen, while the realist is screaming whoa!:
1. Grilled lamb chops, rice or cauliflower rice, green beans, tossed salad
2. Veggie dinner subject to what grows (green beans) and what is on hand
3. Pesto chicken, sliced tomatoes, sliced cucumbers, green beans
4. Veggie dinner, subject to harvest, but I know green beans will be served
5. Another veggie dinner, because things are growing__like crazy
6. Takeout
7. Super salad meal (depends on what is growing!)

* I had no idea what Lebanon bologna was. TheHub went rogue and bought it, and it was more like a slightly soft salami.

** Southernism for an angry, ugly spirit

Y'all can thank me later for this public service announcement!

  1. I'm not sure if it is the heat or simply laziness but my desire and any enjoyment I get from cooking has waned almost completely. My son has eaten more than his fair share of sandwiches (which he prepares) lately. I've been pulling leftovers out of the freezer and making do with those and a few vegetables. Maybe tonight I'll find the energy...or maybe not.

    1. I can vow to both heat and laziness, or just flat out indifference!

  2. Your meals sound good, even if they weren't planned. Nothing better than fresh veggies in the summer.
We watched the Olympic opening ceremony, and I enjoyed the parade of nations. Good to see the Tongan again. ;) I was expecting more from Japan though, maybe Godzilla instead of a lone treadmill walker, but guess everything was scaled back due to the pandemic.
Thanks for the haint video. I remember Mama talking about somebody looking like a haint, but I haven't seen any blue porch ceilings here in VA.

    1. I liked Tongo's procession also! I was kind of hoping he would make an appearance!
I thought the drone globe was magnificent!

  3. I painted my porch haint blue. Even if it did not scare haints, it was pleasant, like a blue summer sky. Tommy is very good about clearing out bits of food if I am asleep when he wants to eat. Love it!

    1. I kind of figured you might have had some haint blue at your former house.

  5. I love Lebanon bologna. It's kind of a Pennsylvania Dutch thing. It comes in regular and sweet. I thought it was fairly regional, I'm surprised your hubby found it in your area. It's especially good with Birch Beer.

    1. I had never heard of it before. It was perfectly fine but reminded me of salami with a bologna texture.

  6. Sometimes I plan. Often I fail. Neither of us are in any danger of wasting away though.

    1. We are so far from wasting away that it is kind of sad. I am finding I really do like a watermelon dinner.

  7. In most things Life I'm a planner -- not so much meals. Most of the time we don't care for whatever the other person is eating. Or I'm hungry and he's not. I've not heard of Lebanon bologna, but my curiosity's piqued.

  8. I think it all worked out just fine! I've been enjoying not planning meals for a change, and just doing the grazing boards or main dish salads has been fantastic! :)

    1. I have got to use some of the things from my freezer so I am planning, but indifference and veggie meals keep foiling my plans.

  9. Lebanon Bologna is ubiquitous in PA near me in Amish country. I can't believe you, the world traveler/gourmand, you've never had it before! There are 2 varieties around these parts...reg. LB and sweet LB.
As soon as the 'real' tomatoes come in here be prepared for a 7 day meal plan from me of BLTs! lol

    1. I could alternate nightly between BLT's and tomato sandwiches. Nothing beats fresh grown tomatoes!

  11. Gosh your husband seems to work some long hours. He leaves very early and then having all these dinner meetings. He must get so tired. And if you like small Olympic delegatons, my friend Stan's son, Samuel, will be the flag carrier and I think the only team member of the Nigerian winter Olympic team at the next Olympics! He's a great lad and I really hope he does well. He could well do because it's so easy for him to train here so fingers crossed!

    1. I remember reading about your friend Stan in some of your posts! I will be watching for his son in the opening parade and cheering him on during the games!
TheHub worked 11 or 12 hours a day form the first of the year until mid April without taking a day off. He is still working 9-10 hours a day but at least is mostly taking the weekends off. If he came in tomorrow and said he had retired I would be so happy (except for having him around 24/7)

  12. Yes, the plan can be more of a suggestion. I have new potatoes from the neighbors and some fresh-picked garden peas that will be cooked with onions, dill and cream sauce tonight. There's some leftover hamburgers from a w/e BBQ that will be served with lettuce salad from the garden and the last of a potato salad. That's as far as the menu has evolved this week. Re: Lebanon bolgona, (which I've never heard of before) I enjoy Lyoner sausage which is very much like bologna.
