What I planned:

6. Some sort of sandwich, toasted cheese or BLT?
7. Takeout
This is what we really ate:
Monday: We forgot about the frozen peas after we made a veggie run Saturday morning and they were in a bag in the car for about 4 hours, They were still cold but very thawed so they had to be cooked. Veggie night!
Fried green tomatoes, squash casserole, pink eyed peas, tomato slice, cucumber slices, pickled squash
Tuesday: The day was a perfect day for grilling. I made sure to cook enough so we would have some left over.
White bbq chicken, green beans, caulitato salad, squash pickles
Wednesday: TheHub called and asked what we had planned for dinner. I told him food could wait__we were swimming! Afterward, we decided a big salad would be more than enough for supper.
Chopped salad with turkey and cheese
Thursday: The zucchini was screaming at me, so I had to use it right then just to get it to be quiet!

Friday: After our swim (We are doing laps, and both of us can be a little too competitive so each of us tries to swim faster and more laps than the other. I may or may not wait until TheHub gets out of the pool, then do a couple of extra laps for the win.) We rinsed off, threw on some clothes and called our favorite Thai place for carry out.

Saturday: I had planned on having sandwiches for dinner, but TheHub had one for lunch and can't do two sandwich meals in one day. So I altered the plan__ slightly.
BLT salad
Sunday: In the states this was Father's Day. TheHub began his day with pancakes and bacon, followed by a sandwich lunch and a very late dinner.
Grilled steak, mixed greens with banana peppers and tomatoes, toast
Which brings me to this week's possibilities:
1. Philly cheesesteak casserole (have to use peppers immediately) green bean salad
2. Maurice salad or chopped salad, keto dessert (TBD)
3. Veggie dinner TBD by whatever is growing or available at the produce stand
4. BLT or toasted cheese sandwiches, green beans
5. Greek chicken, green beans, sliced tomatoes
We are going out to eat 2 times this week* so there should be no take out meals, but the jury is still out for the weekend.

*I am still wary of restaurants but one night is in a private dining room and the other is al fresco.
How are you doing with your Keto diet? I'm still doing Mediterranean way of eating but I have blood work coming up and fear my iron is low. I am not a meat eater and trying to have spinach at least twice week. I do like beans and have them often but I also succumb to sugar which is a nono Drat it. Good for you for swimming- I have a pool too but the novelty has long worn off and I rarely use it...plus I'm the pool man and bored with taking care of it.
ReplyDeleteI love to swim so it is not a chore for me. We have a salt water pump which lessens the care required, though I still have to do something to it every day.
DeleteAt this point, I am just doing tomato sandwiches, and a shredded summer squash (or Zuchinni), beaten eggs and shredded cheese dish and calling it good. Lol. Cindy in the South

DeleteI really, really need to get back to the pool. Mind you I always failed on the lap counting front. I would find myself saying 7 and then realising it had to be an even numbered lap. Big sigh.

ReplyDeleteI love to swim so swimming laps is nothing but pleasure, until the last few and then it becomes a little harder. I really never get in the pool and just cool off. The minute I am in I start swimming.
DeleteYou always have the most interesting meals. I used your chicken fajita recipe modified for my abilities (used a Kraft dressing for my marinade) and added some chili and taco seasoning and we had ours on tortillas tonight for dinner. Very good! I had to look up Maurice salad as that is new to me. :)

I went to the farmers' market last year and then decided to head out for a walk to the lake at Passy. I'd got ratatouille in the trunk of my car when I finished up my walk!

DeleteWe did our first real restaurant experience, (we had gone inside a couple that had no other people in them), on Father's Day. We were a little uneasy, but it was fine. We have high vaccination rates and low infections rates right now and all restrictions have been lifted. Our table was somewhat isolated and all of the staffed was masked the entire time.
ReplyDeleteI know I have to rejoin the world, but we are less than 50 percent vaccinated here, so I feel like I have to protect myself from all those around me. Baby steps I guess.
DeleteI wonder sometimes if we'll ever go back to the way things were, even when COVID is for sure behind us. Takeout has become so much more of a thing. In Chicago, where I live, even though restaurants are fully open, and may have outdoor seating, we've been getting takeout and walking it to a nearby park, which is downright pleasant. It's like a little takeout picnic. I'd be comfortable doing that indefinitely (until it snows).

DeleteI think takeout (especially those places that never offered it before) is here to stay and I think places have adapted to the change. We have done many "picnics" this year also.
i am far less organised than you with meals. i do have a very vague plan each week but it often goes out the window!
